Ingredients
  

  • 1 lb fresh ginger , washed and grated (skin on)
  • 10-12 cups water
  • 1½-2 cups brown sugar or cane sugar
  • 6-8 whole cloves
  • 1 cinnamon stick
  • 6-8 whole all spice (pimento berries)
  • 1 tsp grated nutmeg (optional)
  • Juice of 2 limes
  • 1 tsp active dry yeast optional

Quick Jamaican Ginger Beer (No Fermentation)

    Clean Ginger

    • Wash the ginger with baking soda and vinegar, be sure to scrub off any dirt

    Boil the Ginger

    • Blend half the ginger in a blender.
    • Add ginger, water, cloves, cinnamon stick, allspice (pimento berries) , and nutmeg to a large pot. Bring to a boil and simmer for 20–25 minutes until very fragrant.

    Sweeten

    • Remove from heat and strain if desired. While still hot, stir in sugar until fully dissolved.
    • Add lime juice once cooled
    • Chill and serve over ice
    • Add sparkling water for fizz if desired
    • This version is bold, refreshing, and family‑friendly.

    Fermentation (Optional)

      Cool Completely

      • Allow the mixture to cool to room temperature before adding yeast. This is important to avoid killing the yeast.
      • Stir in yeast and lime juice. Pour into a large glass jar or bottle, leaving space at the top. Cover loosely.

      Rest

      • Let sit at room temperature for 24–48 hours. Taste after 24 hours—longer fermentation creates more bite and fizz.

      Refrigerate

      • Once desired flavor is reached, refrigerate to stop fermentation. Serve chilled.
