  • 2 cups grated coconut fresh or desiccated
  • 4 cups all-purpose flour
  • 1 ½ cups cups brown sugar
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 2 cup coconut milk
  • ½ cup melted butter
  • 1/4 cup White Rum optional
  • 2 tsp vanilla extract
  • 2 large eggs

Instructions
 

Preheat and Prepare

  • Preheat your oven to 350°F (175°C), and grease a rectangular baking dish with butter or cooking spray. This will ensure your Toto Cake doesn't stick to the pan.

Combine the Dry Ingredients

  • In a large mixing bowl, combine the all-purpose flour, brown sugar, baking powder, ground cinnamon, ground nutmeg, and salt. Mix them well until evenly combined.

Add the Wet Ingredients

  • In a separate bowl, whisk together the milk, melted butter, vanilla extract, and eggs until well blended. Slowly pour this mixture into the dry ingredients, stirring gently until you achieve a smooth batter.
