Ingredients
  

  • 12 oz vegan oxtail (get vegan oxtail here)
  • 1 cup water or vegetable broth (480 ml)
  • 1 cup butter beans (cooked or canned, drained)
  • 1 medium onion , diced
  • ½ cup red bell pepper , diced
  • 3 cloves garlic , minced
  • 2 stalks scallion (green onion), chopped
  • 1 whole scotch bonnet pepper (optional)
  • 1 tsp black pepper , to taste
  • ½ tsp paprika
  • 1 tsp all-purpose or complete seasoning
  • 2 tbsp oil
  • 1 tbsp browning sauce (add more if you want a darker color)
  • 1 tbsp mushroom soy sauce
  • ½ tsp Smoked paprika (optional)
  • 3 tbsp sugar , to taste
  • 1 tsp vinegar
  • 1 tbsp maple syrup
  • ½ cup ketchup

Instructions
 

  • Heat oil in a heavy-bottom pot over medium heat.
  • Add onion, bell peppers, whole allspice, thyme, and garlic, and sauté until fragrant and lightly caramelized.
  • Pour in water, brown sugar, mushroom soy sauce, ketchup, sugar, and seasonings. Bring to a gentle simmer.
  • Optional, but recommended: blend the liquid smooth, then pour it back into the pot.
  • Add vegan oxtail and stir to coat in liquid.
  • Cover and simmer for 10 minutes, allowing the oxtail to soften and absorb flavor.
  • Add beans if using.
  • Taste and adjust seasoning. Serve hot.
  • Pro Tip: Low and slow is still the goal — just without the hours. Gentle simmering gives vegan oxtail its best texture.
