This Caribbean Style Potato Leek Soup is a cozy, nourishing twist on a classic comfort dish. 1mediumonion, chopped
2clovesgarlic, minced
1-2sprigsfresh thyme
scotch bonnet, optional (remove seeds of using)
Black pepper, to taste
Salt, to taste (add after soup mix)
½-1cupcoconut milk or plant-based cream(optional, for extra creaminess)
Instructions
Sauté the Leeks- Heat oil or butter in a large pot over medium heat. Add the onions and leeks and cook for 5–7 minutes, until they are soft and fragrant. Stir often so they don’t brown.
Build the Flavor- Add garlic, thyme, scotch bonnet (if using). Cook for 30 seconds until aromatic.
Add Vegetables- Stir in potatoes and carrots. Mix well so everything is coated.
Season & Simmer- Sprinkle in the pumpkinandvegetable soup mixseasoning powder only. Pour in water, stir, and bring to a gentle boil. Reduce the heat and simmer for 15–20 minutes, or until potatoes are very tender.
Blend Until Creamy- Use an immersion blender to blend until smooth, or carefully transfer to a blender in batches.
Finish & Adjust- Stir in coconut milk if using. Taste and adjust salt and pepper as needed.
