Crispy Jerk Lentil Kale Salad

Ingredients
  

Crispy Jerk Lentils

  • ½ cup cooked lentils (green or brown)
  • 1 tbsp olive oil
  • 1–1½ tsp jerk seasoning
  • ¼ tsp salt (or to taste)

Kale Salad Base

  • 4 cups chopped kale
  • 1 tbsp olive oil (for massaging kale)
  • ¼ tsp salt
  • Add-Ins
  • ¼ cup thinly sliced red onion
  • ½ cup thinly sliced apple
  • ½ cup orange segments
  • ½ cup pineapple chunks
  • Creamy Jerk Lime Dressing

Creamy Jerk Lime Dressing

  • ¼ cup vegan mayo or vegan yogurt or regular
  • 1-2 tsp jerk seasoning
  • 2 tbsp fresh lime juice
  • 1 tbsp maple syrup or honey
  • 1 tbsp olive oil
  • 1-2 tbsp water (to thin)
  • ¼ tsp salt (or to taste)

Instructions
 

Crispy Jerk Lentils

  • Rinse lentils and boil in salted water for 15–20 minutes until just tender. Or Pressure cook for 6 mins.
  • Drain VERY well and dry them completely
  • Spread on a towel or tray and let steam dry 10 minutes (this step matters!)
  • We season cooked lentils with olive oil, jerk seasoning, garlic powder, and salt, then roast or air-fry them until crispy and golden. The result is crunchy, spicy lentils that add texture and bold flavor to every bite.

Massage the Kale

  • We massage fresh chopped kale with olive oil and a pinch of salt until it softens, deepens in color, and becomes tender. This step transforms kale from bitter and chewy into smooth and flavorful.

Build the Salad

  • We layer the kale with:
  • Sweet onions, Crisp apples, Juicy oranges, Fresh pineapple and feta cheese
  • This creates a perfect balance of sweetness, acidity, and crunch.
  • We drizzle everything with our creamy jerk lime dressing, tossing gently to coat without overdressing.
  • Finish
  • We top the salad with the hot crispy jerk lentils right before serving to keep the crunch strong.
