  • 2 cups rice (washed)

  • 2 tbsp butter or oil
  • ½ onion , diced
  • 3 garlic cloves , minced
  • 1-2 sprigs thyme or your preferred herb
  • ½ bell pepper , diced (optional)
  • 1 tsp all-purpose seasoning or salt & pepper to taste
  • 1 ½-2 cups broth or water
  • ½ cup coconut milk

STEP 1 — Wash Your Rice

  • Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents gummy or sticky rice.

STEP 2 — Toast the Curry Powder

  • Heat the butter or oil in your pot over medium heat.
Add the curry powder (and turmeric if using) and toast it for 30–60 seconds until aromatic.
  • This step is crucial — it removes bitterness and unlocks flavor.

STEP 3 — Add Aromatics

  • Add your onion, garlic, herbs, and bell pepper.
Sauté for 2–3 minutes until everything smells fragrant.

STEP 4 — Add Rice

  • Pour in your washed rice and mix to coat every grain in curry and oil.
Season with salt, pepper, or complete seasoning.

STEP 5 — Add Liquid

  • Pour in broth or water.
Optionally add coconut milk for creamier curry rice.
Taste the liquid — it should be slightly salty and seasoned.

STEP 6 — Simmer

  • Cover your pot tightly and let the rice cook on low heat for 12–15 minutes.
Do not open the lid during this time — the steam is what cooks the rice.
  • Remove from heat, lift the lid, and fluff with a fork.
  • Your curry rice should be fluffy, golden, and aromatic.
