Ingredients
  

For the Sushi Rice

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt

For the Honey Garlic Sauce:

  • 1/4 cup honey
  • 3 tablespoons soy sauce
  • 3 garlic cloves , minced
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Protein Choices

  • 1 lb cooked shrimp
  • 1 lb grilled chicken breast (sliced)
  • 1 lb cooked salmon (flaked)

Other Roll Ingredients:

  • 5 sheets nori (seaweed)
  • 1 cucumber , julienned
  • 1 avocado , sliced
  • 1 cabbage , chopped
  • Sesame seeds (optional)
  • Pickled ginger (for serving)
  • Soy sauce (for dipping)

Instructions
 

Prepare the Sushi Rice

  • Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a pot and bring to a boil. Cover and reduce heat to low, cooking for 18-20 minutes. Remove from heat and let it sit for 10 minutes.
  • In a small bowl, mix rice vinegar, sugar, and salt. Gently fold this mixture into the warm rice. Allow the rice to cool to room temperature.

Make the Honey Garlic Sauce

  • In a saucepan, heat sesame oil over medium heat. Add minced garlic and sauté until fragrant. Stir in honey and soy sauce, bringing the mixture to a simmer.
  • Mix cornstarch with water to create a slurry and add it to the sauce. Stir until the sauce thickens. Remove from heat and set aside.

Cook and Coat the Protein

  • Shrimp: Sauté cooked shrimp in a pan for 2-3 minutes until heated through. Toss with honey garlic sauce.
  • Chicken: Grill or pan-cook the chicken breast, slice into thin strips, and coat with the sauce.
  • Salmon: Bake or pan-sear salmon until cooked through, flake it apart, and mix with the sauce.

Assemble the Sushi Rolls

  • Place a sheet of nori on a bamboo sushi mat. Spread a thin layer of seasoned sushi rice over the nori, leaving an inch uncovered at the top.
  • Arrange your honey garlic-coated protein, cucumber, carrot, and avocado along the bottom edge.
  • Gently lift the bamboo mat and begin rolling the sushi tightly. Apply slight pressure to keep the roll firm. Seal the edge with a bit of water.

Slice and Serve

  • Using a sharp knife, slice the sushi roll into bite-sized pieces. Sprinkle sesame seeds on top if desired. Serve with pickled ginger, soy sauce, and wasabi.
