Ingredients
  

  • 6 green bananas
  • 5 garlic cloves , minced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon complete seasoning
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (plus more for boiling)
  • 2 tablespoons chopped scallion
  • 1 tablespoon fresh thyme
  • 1/4 cup milk or coconut milk
  • Fresh parsley for garnish (optional)

Instructions
 

  • Step 1: Peel the Green Bananas
  • Cut off both ends of the green bananas. Carefully slice the peel lengthwise and remove the skin. Green bananas can stain your hands, so you may want to rub your hands with oil first or wear gloves.
  • Step 2: Boil the Bananas
  • Place the peeled bananas into a large pot and cover with water. Add salt and boil for about 15-20 minutes or until fork tender.
  • Step 3: Sauté the Garlic
  • In a skillet, heat olive oil and butter over medium heat. Add minced garlic, scallion, and thyme. Sauté for 1-2 minutes until fragrant.
  • Step 4: Mash the Bananas
  • Drain the boiled bananas and place them into a bowl. Add the garlic mixture, milk or coconut milk, and seasonings. Mash until creamy using a potato masher or fork.
  • Step 5: Garnish and Serve
  • Top with fresh parsley and extra melted butter if desired. Serve warm.
