Ingredients
  

  • 3-4 Scotch bonnet peppers adjust quantity based on your spice tolerance
  • 4 green onions roughly chopped
  • 4 cloves of garlic
  • 8 stems of fresh thyme
  • 2 tbsp mushroom soy sauce
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 12 ground pimento berries
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tbsp black pepper
  • 1 tsp salt
  • Juice of 2 limes
  • 1 tablespoon vinegar apple cider or white

Instructions
 

  • Start by deseeding the Scotch bonnet peppers if you prefer less heat. Remember to handle them with care, as they can be extremely spicy.
  • In a food processor or blender, combine the deseeded peppers, green onions, garlic, thyme leaves, soy sauce, olive oil, brown sugar, allspice, cinnamon, nutmeg, black pepper, salt, lime juice, and vinegar.
  • Blend the ingredients until you achieve a smooth and well-combined marinade.
  • Taste the marinade and adjust the seasoning according to your preference. You can add more spice, sweetness, or tanginess as desired.
  • Transfer the marinade into airtight containers or sealable plastic bags.
  • Use the marinade to marinate your choice of meat, such as chicken, pork, or even tofu. Allow the meat to marinate for at least 4 hours, or preferably overnight, to let the flavors infuse.
  • Grill, bake, or cook the marinated meat to perfection, enjoying the tantalizing aroma and flavors of homemade jerk cuisine.
