Ingredients
  

  • For the Lamb Loin:
  • 2 lamb loins (about 1.5 lbs total)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp italian herbs
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 sprigs fresh green onions (garnish)
  • 2 cloves garlic , crushed

For the Honey Garlic Sauce

  • 1/4 cup honey
  • 3 cloves garlic , minced
  • 3 tsp ginger , minced
  • 2 tbsp soy sauce (use mushroom soy sauce, if you can find, it gives it more flavor.
  • 1/2 tsp red pepper flakes (optional, for a slight kick)
  • 1 tbsp butter (for a glossy finish)

Instructions
 

Preparing the Lamb Loin

  • Pat the lamb loin dry with a paper towel to remove excess moisture. This helps with better browning.
  • Add a drizzle of oil directly to the lamb, season generously with salt, black pepper. Let that rest for 5 mins, then rub 1 tsp honey all over each lamb.
  • Season with onion powder, italian herbs, and smoked paprika. Allow it to sit for 15–20 minutes at room temperature to absorb the seasoning. Or overnight

Searing the Lamb Loin

  • Heat a large skillet over medium-high heat and add olive oil and butter.
  • Once the butter is melted and sizzling, add the crushed garlic cloves and rosemary sprigs to infuse the oil.
  • Place the lamb loin in the pan and sear for 3–4 minutes per side until a golden-brown crust forms.
  • Reduce the heat to medium and cook for another 5–7 minutes, turning occasionally, until the internal temperature reaches 130°F (54°C) for medium-rare or 140°F (60°C) for medium.
  • Remove the lamb from the pan and let it rest for 5 minutes.

Making the Honey Garlic Sauce

  • In the same pan, lower the heat to medium-low and add minced garlic and ginger. Cook for 30 seconds until fragrant.
  • Pour in soy sauce, honey. Stir well to combine.
  • Let the sauce simmer for 2–3 minutes until slightly thickened.
  • Stir in red pepper flakes if using.
  • Add 1 tbsp of butter to the sauce and mix until it becomes glossy.

Serving the Honey Garlic Lamb Loin

  • Place lamb loin back into the pot. (Cut up lamb loins into cubes if no bone is in your cut)
  • Scoop the honey garlic sauce over the lamb.
  • Garnish with fresh herbs like scallions, parsley or green onions.
  • Serve immediately with sides of your choice.
