How to Make Jamaican Chicken Foot Soup

Jamaican Chicken Foot Soup is a flavorful and nutritious It's comforting and heartwarming soup. Traditionally served on Saturdays throughout the Caribbean. Made from chicken foot, Soup for us Jamaicans is a whole meal that includes chicken foot, corn, yellow yam, potatoes, dumplings, and vegetables combined with chicken and pumpkin soup mix. Whether you choose to have it for lunch or dinner it will warm you up in these winter months ahead.

Ingredients
  

  • 1 Ibs Chicken Foot
  • 1 pack Chicken noodle soup mix
  • 1 pack Pumpkin noodle soup mix
  • ½ fresh pumpkin cubed
  • 3 cloves Garlic
  • ½ Ib Yellow yam cubed
  • 1 whole Chocho chayote Peal and cubed
  • 2 whole Corn cut into 7 pieces
  • 3 medium carrot Peal and diced
  • 1 medium onion diced
  • 1 medium CocoYam diced
  • 2 small Turnip diced
  • 2 medium Potatoes diced
  • 1 whole *Scotch bonnet pepper
  • 2 springs Scallions spring onions
  • 5 sprig thyme
  • 5-7 whole Pimento berries Allspice
  • 2 tbsp Salt to your taste
  • 2 tbsp Complete Seasoning
  • 2 tbsp tbsp Adobo
  • 2 tbsp Balck Pepper
  • 12 cups Water

Dumpling Mix Ingredients

  • 1 cup Plain Flour
  • ¼ cup water

How to Make the Dumplings

  • In a medium bowl, add the flour and salt.
  • Add the ¼ cup of water and mix to form a dough.
  • Knead until the dough is smooth
  • Grab a small (golf ball size) amount of the dough and roll it into the palm of your hands to create "spinners". To make regular-shaped dumplings form the doughball into discs.

How to Make the Chicken Foot Soup

  • Bring a pot of water to a boil.
  • Place the chicken foot, pumpkin, garlic, and pimento berries in the pot with water.
  • Leave the pot to boil for 30 minutes or until the chicken foot is cooked and the pumpkin is tender. The pumpkin should have broken down and changed the color of the water. If it hasn't used a fork to mash the pumpkin.
  • While that is boiling chop up your roots and vegetables such as Carrots, Corn, Scallions, Onion, Pimento Seed, Potatoes, Yellow Yam, Chayote (Cho-Cho), Cocoyam, and Turnip and place them in water so that they don't change color.
  • After the pumpkin and chicken, the foot is boiled Add in the scallion, Cho Cho, dasheen, carrots, turnip, yellow yam, thyme, chicken, and pumpkin soup mix and scotch bonnet. Then, Season your pot with complete seasoning, adobo, black pepper, and salt.
  • Make your dumpling/ spinners aka spinners.
  • Once all of the ingredients have been added reduce the heat to medium, cover and simmer for 30 minutes until the soup thickens up.
  • Add in your corn and potatoes and simmer for 10 minutes.
  • Carefully lower each of the spinners and dumplings into the boiling pot of soup
  • And boil for 5 minutes then serve hot.
