Ingredients
  

Ingredients to season Chicken Gizzards

  • 1 lbs chicken gizzards
  • 2 tbsp complete seasoning
  • 1 tbsp ground black pepper
  • ½ tbsp garlic powder
  • 1 tbsp paprika
  • 1 large egg beaten
  • 1 tbsp red pepper flakes
  • 1 tbsp Adobo all-purpose seasoning

Ingredients to Boil chicken gizzards

  • Water to cover gizzards
  • 1 whole * 1 whole scotch bonnet pepper optional
  • 2 cloves garlic
  • 2 stems thyme
  • 2 stalks scallions
  • 2 tbsp black pepper
  • 2 tbsp complete seasoning
  • 1 pinch salt

Ingredients to season flour

  • 1 cup all-purpose flour
  • 2 tbsp complete seasoning
  • 2 tbsp ground black pepper
  • 1 tsp garlic powder
  • 1 tbsp paprika
  • 1 tsp red pepper flakes
  • 1 tbsp adobo

Instructions
 

  • Clean and remove the excess fat from the gizzards then wash it in vinegar and lemon water.
  • Boil the gizzards or until tender for 45 minutes-1 hour in the water, thyme, scallion, garlic, ginger, pimento berries, a pinch of salt, 1 tbsp black pepper, and 1 tbsp complete seasoning.
  • Then cool the gizzards and season them, and let them marinate for at least 30 mins.
  • Combine the flour and seasonings in a bowl. Beat your eggs.
  • Add the eggs to the gizzards then mix them well.
  • Place the gizzards into the flour and shake it generously to create flakes.
  • Heat enough oil to cover the gizzards to 350°F (180єC) and then add garlic, scotch bonnet, thyme, and Pimento berries.
  • fry Gizzards for 2-5 minutes or until golden brown.
  • Serve it with your favorite side dish.
