Instructions
Step 1: Marinate the Chicken
Mix buttermilk and seasonings. Add chicken thighs and rub it all over, cover, and refrigerate for at least 2 hours (overnight gives the best flavor). This step makes the chicken juicy and tender.
Step 2: Make the Jamaican Barb Sauce
In a saucepan, combine all sauce ingredients. Bring to a simmer over medium heat and cook for 5–7 minutes until thickened. Taste and adjust sweetness, tang, or spice to your liking. Set aside.
Step 3: Prepare the Seasoned Coating
In a large bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, adobo, complete salt, and pepper.
Step 4: Coat the Chicken
Remove chicken from the buttermilk marinade. Dredge each piece in the seasoned flour mix, dip back in buttermilk, then dredge again in flour for a double-crunch coating.
Step 5: Season Oil & Fry the Chicken
To a pot, add oil, garlic, pimento, scotch bonnet, and thyme. Heat oil to 350°F
When the oil is hot, remove garlic, pimento, and thyme from the pot.
Fry chicken pieces until golden brown and fully cooked (about 6–8 minutes depending on thickness). Place on paper towels to drain.
Dip chicken in sauce.
Step 6: Assemble the Sliders
Lightly toast your slider buns.
Add a crispy chicken thigh piece.
Top with plantains.
Place bun tops on and serve hot.
