Ingredients
  

For Carrot Base:

  • 2 lbs fresh carrots (about 8-10 medium carrots)
  • 3-4 cups coconut milk (or good-quality canned if needed)
  • 2 cinnamon sticks
  • ½ tsp nutmeg
  • 1 tbsp vanilla
  • Pinch of salt (enhances flavors)

For Punch Mixture:

  • 1 cup-can sweetened condensed milk (adjust for desired sweetness)
  • ½ cup evaporated milk (optional, for extra creaminess)
  • 1 tsp vanilla extract (or seeds scraped from 1 vanilla bean)
  • ½ tsp grated nutmeg
  • ½ tsp ground cinnamon
  • ¼ tsp mixed spice (optional)
  • 2-3 Tbsp honey or sugar (optional, depending on desired sweetness)
  • ½ cup cold water (to thin if needed)

Optional:

  • 1-2 Tbsp white rum (for an adult popsicle twist)
  • ½ dragon stout or guinness (for an adult popsicle twist)

Instructions
 

Prepare Coconut Milk Base:

  • In a medium saucepan, add your freshly made coconut milk.
  • Drop in cinnamon sticks, grated or ground nutmeg, and vanilla (either extract or the seeds/pod).

Boil Carrots:

  • Peel and chop carrots into small pieces.
  • Add chopped carrots to the coconut milk mixture.
  • Bring to a gentle boil over medium heat.
  • Lower heat and simmer until carrots are very soft, about 15–20 minutes. Stir occasionally to avoid scorching the milk.

Remove Spices:

  • Take out the cinnamon sticks and any vanilla pods, if used.

Blend

  • Let mixture cool slightly.
  • Transfer the carrots and coconut milk into a blender.
  • Add sweetened condensed milk, a pinch of salt, and optional rum or lime juice if using.
  • Blend until completely smooth. Taste and adjust sweetness if desired.

Strain (Optional):

  • For a super-smooth texture, strain the mixture through a fine mesh sieve.

Cool Mixture:

  • Let the blended mixture cool to room temperature (or chill it briefly in the fridge).

Pour Into Molds:

  • Pour the mixture into popsicle molds, leaving a little room for expansion.
  • Insert popsicle sticks.

Freeze:

  • Freeze for at least 6 hours or overnight until fully set.

Unmold and Enjoy:

  • Run molds under warm water for a few seconds to release the popsicles. Enjoy your creamy, spiced Jamaican treat!
