Jamaican Coconut Drops

Jamaican Coconut Drops are a sweet treat made from fresh coconut chopped into little pieces that are a sweet, soft, and gummy texture. Traditionally, it's cooked then the drops are scooped from the pot and dropped on a banana leaf, and left to cool. With easy ingredients added to the drops like sugar, ginger, nutmeg, vanilla, and salt you too can have these deliciously sweet, chewy coconut snacks any time you feel for something tasty.

Ingredients
  

  • 4 cups of Water
  • 2 Coconuts
  • 2 cups Course Sugar turbinado sugar (to taste)
  • 1/2 cup Ginger
  • 1 tbsp Vanilla
  • 1 pinch Nutmeg
  • 1 Cinnamon Stick

Instructions
 

  • Crack open your coconut and dice it up
  • Add water to the pot and the cinnamon stick.
  • Add in coconut and ginger boil for 5 mins
  • Remove Cinnamon Stick
  • Add in Sugar,Vanilla and Nutmeg and let it boil and simmer until sticky
  • Place on parchment paper, a baking pan (whatever you have) make sure to spray the pan
  • Cool and ENJOY!
