1teaspoonthyme(fresh or dried)

1/8cupof sugar
1teaspooncomplete seasoning
1/2teaspoonblack pepper

Instructions
Prepare the Sausage:
Heat the vegetable oil in a large skillet or frying pan over medium heat. Add the sausage slices and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the pan and set aside.
Sauté Aromatics:
In the same pan, add the chopped onions, bell pepper, scallion, and garlic. Sauté for about 3 minutes, or until they start to soften and release their aroma.
Add Tomatoes and Scotch Bonnet:
Add the chopped tomatoes and scotch bonnet pepper to the pan. Cook for another 2-3 minutes, stirring occasionally. The tomatoes will start to break down and release their juices.

Stir in the thyme, complete seasoning, and black pepper. Add the ketchup, water and sugar mixing well to coat all the vegetables. Let this simmer for 2 minutes to allow the flavors to come together.

Return the browned sausage to the pan. Stir everything together to combine the sausage with the seasoned vegetables and ketchup. Let the mixture cook for another 5 minutes, allowing the sausage to absorb the flavors of the sauce.
