Ingredients
  

  • 1 lb smoked sausage (smoked or regular, sliced round)
  • 1 medium onion (chopped)
  • 1 bell pepper (chopped)
  • 3 stalks scallion (chopped)
  • 2 cloves garlic (minced)
  • 2 tomatoes (chopped)
  • 1 scotch bonnet pepper (chopped or left whole for less heat)
  • 1 teaspoon thyme (fresh or dried)
  • 2 tablespoons ketchup
  • 1/8 cup of sugar
  • 1 teaspoon complete seasoning
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions
 

Prepare the Sausage:

  • Heat the vegetable oil in a large skillet or frying pan over medium heat. Add the sausage slices and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the pan and set aside.

Sauté Aromatics:

  • In the same pan, add the chopped onions, bell pepper, scallion, and garlic. Sauté for about 3 minutes, or until they start to soften and release their aroma.

Add Tomatoes and Scotch Bonnet:

  • Add the chopped tomatoes and scotch bonnet pepper to the pan. Cook for another 2-3 minutes, stirring occasionally. The tomatoes will start to break down and release their juices.

Add Seasoning and Ketchup:

  • Stir in the thyme, complete seasoning, and black pepper. Add the ketchup, water and sugar mixing well to coat all the vegetables. Let this simmer for 2 minutes to allow the flavors to come together.

Combine Everything:

  • Return the browned sausage to the pan. Stir everything together to combine the sausage with the seasoned vegetables and ketchup. Let the mixture cook for another 5 minutes, allowing the sausage to absorb the flavors of the sauce.

Serve:

  • Your Jamaican Cook-Up Sausage is ready! Serve it with a side of fried dumplings, boiled yam, or bread for a complete meal.
