Roast Yam with Roast Salt fish is delicious. Roasted for 45 minutes over a charcoal fire developing an amazing smoky flavor; then the saltfish is placed directly on the coal creating a nice char but bringing out flavors you would never know existed in Saltfish. Your tastebuds will take a ride to flavor town. The roast yam can also be served with cook-up saltfish its all about preference.
1scotch bonnet peppersub about ½ teaspoon red pepper flakes

How to Make Cook-up Saltfish
Place your saltfish to soak in warm water for about 4 hours or overnight then pour off the water and clean off the skin.
Heat the oil in a skillet, add the onions, thyme, scallions, tomatoes, bell peppers, garlic, and scotch bonnet pepper, reduce the heat, and cook for 5 minutes.
Drain the salt cod and flake and add it into the skillet. Add the black pepper and complete the seasoning.
Serve over yellow yam.
How to Roast Saltfish
Place your saltfish to soak in warm water for about 4 hours or overnight then pour off the water and clean off the skin.
Pat it dry and let it sit for at least 15 mins to ensure it's dry
After you have roasted your yam place the saltfish directly on the coal and roast it for 10-15 mins
How to roast yam
Use a brush (or your hands) and wash the dirt off the yellow yam. The skin is sometimes eaten.
Start your coal stove or grill, then fire and put whole yellow yam on the grill.
Cook on all sides till brownish black.
Use a skewer to check if cooked.
Take the yellow yam off the grill and using a knife scrape off the “burnt” or darkness of the yam.
Roast the saltfish directly on the coal.
Peel and cut the yam in and butter the yam, serve it with ith the saltfish.
