Ingredients
  

  • 2 lbs beef (chuck, stew beef, or brisket), cut into chunks – Provides the protein base for the dish.
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp all-purpose seasoning
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1 tsp dried thyme or 2 sprigs fresh thyme
  • 1 tsp browning sauce
  • 2 cloves garlic , minced
  • 1/2 tsp crushed pimento (allspice)
  • 1 tbsp vinegar or lime juice
  • 1 tbsp mushroom soy sauce if you cant find it just use regular
  • 1 tsp additional browning sauce (optional for color)

For Cooking:

  • 2 tbsp vegetable oil
  • 1 medium onion , chopped
  • 1 medium tomato , chopped
  • 1 medium irish potato , diced
  • 1/2 red bell pepper , sliced
  • 1/2 green bell pepper , sliced
  • 1 Scotch bonnet pepper (optional, for heat)
  • 2 cups beef broth or water
  • 1 tbsp tomato ketchup
  • 1 tsp mushroom soy sauce
  • 1 tbsp butter (for extra richness)

Instructions
 

Marinate the Beef

  • To get the best flavors, season the beef in advance. In a large bowl, combine the beef chunks with all the marinade ingredients. Massage the seasonings into the meat, ensuring it is well coated. Cover and let it marinate for at least 2 hours, preferably overnight, for deeper flavor.

Brown the Beef

  • Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Remove the beef from the marinade, shaking off excess liquid. Sear the beef pieces on all sides until browned. This process enhances the flavor and adds a rich, caramelized color to the stew.

Sauté the Aromatics

  • Once the beef is browned, remove it from the pot and set aside. In the same pot, add a little more oil if needed and sauté the onions, garlic, bell peppers, and tomatoes until soft and fragrant.

Simmer the Stew

  • Return the browned beef to the pot. Stir in the ketchup, mushroom soy sauce, additional browning sauce, and beef broth. Bring to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender.

Add Vegetables & Finish Cooking

  • Add the diced potatoes and Scotch bonnet pepper (if using). Let it simmer for another 20 minutes, allowing the sauce to thicken and the flavors to blend.

Serve and Enjoy

  • Once the beef is tender and the sauce has thickened to your liking, remove from heat. Serve with rice and peas, steamed white rice, or boiled dumplings and yams for a complete Jamaican meal.
