Add all ingredients to a saucepan over medium heat
Stir until fully combined
Let simmer for 5–8 minutes
Stir occasionally until thick and glossy
Pour on top of the pulled pork
Remove from pot
Sauté the Vegetables
In the same skillet, add olive oil and sauté onions, scallions, thyme, and garlic until fragrant.
Make the Creamy Jerk Sauce
Pour in coconut milk or heavy cream and stir in jerk seasoning. Let it simmer for 3–5 minutes until slightly thickened.
Add cheeses (or vegan alternative) and stir until smooth.
Add pasta and bell peppers.
Adjust seasoning with salt, pepper, or more jerk seasoning if needed.
Plate and Finish
Serve pasta hot with pulled pork on top.
