Ingredients
  

The Star Ingredient

  • 1 package plant-based pulled “pork” (such as MyPulledPork)
  • 1 tbsp jerk seasoning

For the Pasta

  • 12 oz penne pasta
  • 1 tbsp olive oil
  • 1/2 onion , sliced
  • 3 cloves garlic , minced
  • 1 cup red bell pepper , sliced
  • 1 cup yellow bell pepper , sliced
  • 1 cup green bell pepper , sliced
  • 2 scallions , chopped
  • 1-2 sprigs fresh thyme
  • 1 cup coconut milk (or heavy cream)
  • 1-2 tbsp jerk seasoning (adjust to taste)
  • 1/2 cup grated colby jack (or vegan alternative)
  • 1/2 cup grated cheddar cheese
  • Salt and black pepper to taste

Jerk BBQ Sauce

  • 1/2 cup ketchup
  • 2-3 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1-2 tbsp jerk seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 tbsp honey or maple syrup (optional)

Instructions
 

Cook the Pasta

  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside.
  • Cook the Pulled “Pork”
  • Heat a skillet over medium heat and add the pulled “pork. and jerk seasoning” Cook until heated through and slightly crispy on the edges.
  • Pro Tip: Let it sit undisturbed for a minute or two to develop texture; this is key for that “meaty” feel.

How to Make BBQ Sauce

  • Add all ingredients to a saucepan over medium heat
  • Stir until fully combined
  • Let simmer for 5–8 minutes
  • Stir occasionally until thick and glossy
  • Pour on top of the pulled pork
  • Remove from pot
  • Sauté the Vegetables
  • In the same skillet, add olive oil and sauté onions, scallions, thyme, and garlic until fragrant.
  • Make the Creamy Jerk Sauce
  • Pour in coconut milk or heavy cream and stir in jerk seasoning. Let it simmer for 3–5 minutes until slightly thickened.
  • Add cheeses (or vegan alternative) and stir until smooth.
  • Add pasta and bell peppers.
  • Adjust seasoning with salt, pepper, or more jerk seasoning if needed.
  • Plate and Finish
  • Serve pasta hot with pulled pork on top.
