Ingredients
  

For the Hen

  • 1 Cornish hen (1.5–2 lbs)
  • 2-3 tbsp jerk seasoning
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 3 cloves garlic , crushed
  • 1-2 sprigs fresh thyme
  • ½ tsp ginger (optional)

For the Maple Jerk Glaze

  • ¼ cup pure maple syrup
  • 1 tbsp butter
  • ½-1 tsp jerk seasoning
  • 1 tsp lime juice
  • ¼ tsp allspice
  • Pinch of salt

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Cut the hen in half or spatchcock it.
  • Mix jerk seasoning, garlic, soy, thyme, lime, and olive oil.
  • Rub marinade all over hen; marinate for at least 1 hour.
  • Roast hen for 35–45 minutes until golden.
  • Make glaze: simmer maple syrup, butter, jerk seasoning, lime, allspice.
  • Brush glaze over hen and roast 10 more minutes.
  • Serve hot with extra glaze on top.
