Ingredients
  

  • 16- ounce penne pasta
  • 2 large cloves of garlic
  • 1 medium onion
  • 4 tbsp olive oil
  • 1 tsp red pepper flakes
  • 2 tbsp black pepper to taste
  • 1 tbsp adobo
  • 2 tbsp oregano
  • 3 tbsp complete seasoning
  • ½ tsp salt plus more for pasta water
  • ½ tsp thyme
  • 1 cup white rum
  • 2 tbsp tomato paste
  • 32 ounces crushed tomatoes 1 large can
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • A handful of fresh basil

Instructions
 

  • Cook the pasta in seasoned boiling water according to package directions until al dente (season pasta water with 1 tsp olive oil, salt, and 1 tsp complete seasoning. SAVE 1 CUP OF PASTA WATER.
  • While the pasta is cooking, prepare the sauce.
  • Heat oil in a large pan over medium heat. Add the garlic and cook until semi-soft then add in garlic and red pepper flakes and cook for 30 seconds.
  • Add the rum to the pan, tomato paste mix, and then add tomato sauce from the can. Place the tomatoes in a blender or food processor and puree until smooth.
  • Simmer the sauce for 10 minutes over medium-low heat.
  • Stir in the heavy cream and parmesan cheese and simmer for another 5 minutes or until thickened. Season the sauce with complete seasoning, adobo, onion powder, garlic powder oregano, red pepper flakes, salt, and pepper to taste.
  • Place the pasta in the pt and toss to coat. Sprinkle with basil, parmesan cheese, and red pepper flakes (optional), then serve.
