Ingredients
  

  • 2 very ripe plantains (yellow with black spots)
  • ½ cup all-purpose flour
  • 2 tbsp sugar (adjust to taste)
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon (optional but amazing)
  • ¼ tsp nutmeg (optional)
  • ½ tsp vanilla extract
  • ½ tsp almond extract
  • ¼ - ⅓ cup coconut milk (or milk)
  • Oil for frying

Instructions
 

Step 1: Mash the Plantains

  • Peel the ripe plantains and mash them in a bowl until mostly smooth (a few small lumps are fine).

Step 2: Mix the Batter

  • Add flour, sugar, baking powder, salt, cinnamon, nutmeg, almond, and vanilla extract.
Slowly stir in milk until you get a thick but scoopable batter.

Step 3: Heat the Oil

  • Heat about 1 inch of oil in a frying pan over medium heat.

Step 4: Fry the Fritters

  • Scoop spoonfuls of batter into the hot oil.
Fry for 2–3 minutes per side until golden brown.

Step 5: Drain & Serve

  • Remove and drain on paper towels. Serve warm and enjoy!
