Fried chicken is a Jamaican favorite. Growing up in Jamaica whenever anyone would order boxed food from restaurants if they are ordering fried chicken it had to be with oxtail or curry gravy. But we didn't want just to make regular fried chicken, we took the food to the next level by adding some jerk seasoning to our mayonnaise batter. 5cupsof Canola Oil or any frying oil you have except for Extra-Virgin Olive Oil because of its low smoke point
1Scotch Bonnet Pepper
5Pimento Berries
2stemsof Fresh Thyme
2pegsof Raw Garliccrushed
Instructions
Add Oil to Pot to get hot. Then chop up the whole chicken.
Soak the chicken with vinegar and lime water to take away rawness and slime for at least 10 mins
Season your chicken with the dry season, pour the mayo on it, and mix it well.Tip: leave some of the seasonings to put in the flour to fry your chicken
Grab two bowls in one add cool water fill it up to the top and put a strainer or calender in the bowl of water
Fill the other bowl with flour and add the rest of your dry seasoning to it.
After you have seasoned your flour put the chicken you are going to fry in the flour. Tip: Now listen carefully scoop and fold the chicken into the flour until it’s fully covered. Press the flour in the chicken.
After the chicken is fully coated in the flour. Shake off the excess flour put the chicken in the strainer and dip it in the water.
After you have submerged the chicken in the water drain it and drop it back in the flour
Scoop, Fold and Press the flour into the chicken. Shake off excess flour
To the oil add scotch bonnet pepper, pimento, fresh thyme, and garlic to season the oil.
By now your oil should be hot and ready so go ahead and put your chicken in the hot pot and fry it for 12-15 depending on the size of the chicken.
