1 medium cabbage (shredded) 1 medium onion (sliced) 1 bag frozen mixed vegetable 1 bell pepper (sliced; use red, green, or yellow for a pop of color) 2 stalks scallion (chopped) 1 whole tomato (diced) 2 cloves garlic (minced) 1 sprig thyme 5 pimento berries 1 Scotch bonnet pepper (optional, for heat; use whole for milder spice or sliced for intense heat) 2-3 tbsp cooking oil 1/4 cup water 3 tsp butter 1 tsp black pepper 1 tsp all-purpose seasoning (optional, for added flavor) Salt to taste
Prepare the vegetables: Wash and shred the cabbage. Slice the onion, carrot, and bell pepper, and chop the scallion and garlic.
Heat the oil: In a large skillet or Dutch oven, heat oil over medium heat.
Sauté aromatics: Add the onion, bell peppers, garlic, scallion, and thyme. Sauté until fragrant, about 2 minutes.
Add vegetables: Stir in the cabbage, mixed vegetable and butter. Mix well to combine.
Season and steam: Sprinkle in black pepper, salt, and all-purpose seasoning. Add water , cover the pan, and reduce the heat to low.
Cook gently. Steam for 8-10 minutes, stirring occasionally. The cabbage should be tender but not mushy.
Adjust seasoning: Taste and adjust seasoning as needed. Remove the Scotch bonnet pepper before serving.
