Ingredients
  

  • 1 medium cabbage (shredded)
  • 1 medium onion (sliced)
  • 1 bag frozen mixed vegetable
  • 1 bell pepper (sliced; use red, green, or yellow for a pop of color)
  • 2 stalks scallion (chopped)
  • 1 whole tomato (diced)
  • 2 cloves garlic (minced)
  • 1 sprig thyme
  • 5 pimento berries
  • 1 Scotch bonnet pepper (optional, for heat; use whole for milder spice or sliced for intense heat)
  • 2-3 tbsp cooking oil
  • 1/4 cup water
  • 3 tsp butter
  • 1 tsp black pepper
  • 1 tsp all-purpose seasoning (optional, for added flavor)
  • Salt to taste

Instructions
 

  • Prepare the vegetables: Wash and shred the cabbage. Slice the onion, carrot, and bell pepper, and chop the scallion and garlic.
  • Heat the oil: In a large skillet or Dutch oven, heat oil over medium heat.
  • Sauté aromatics: Add the onion, bell peppers, garlic, scallion, and thyme. Sauté until fragrant, about 2 minutes.
  • Add vegetables: Stir in the cabbage, mixed vegetable and butter. Mix well to combine.
  • Season and steam: Sprinkle in black pepper, salt, and all-purpose seasoning. Add water , cover the pan, and reduce the heat to low.
  • Cook gently. Steam for 8-10 minutes, stirring occasionally. The cabbage should be tender but not mushy.
  • Adjust seasoning: Taste and adjust seasoning as needed. Remove the Scotch bonnet pepper before serving.
  • Serve: Transfer to a serving dish and enjoy warm with your favorite Jamaican sides.
