Ingredients

Jerk Chicken

  • 2 lbs boneless , skinless chicken thighs
  • ½ cup jerk marinaide
  • 1 tbsp oil

Taco Base

  • Mini flour or corn tortillas

Fresh Toppings

  • Shredded purple cabbage
  • Sour cream or jerk crema
  • Shredded cheese
  • Fresh cilantro (optional)

Extras

  • Lime wedges
  • Tortilla chips (optional)

Instructions

Step 1: Season & Marinate the Chicken

  • In a bowl, combine your chicken with jerk seasoning, garlic, thyme, black pepper, and oil.
  • Mix well and let it marinate for at least 15–30 minutes.
  • 👉 Pro Tip: The longer it marinates, the deeper the flavor.

Step 2: Sear the Chicken

  • Heat a skillet over medium-high heat and add oil.
  • Place the chicken in the pan and cook until:
  • Fully cooked
  • Slightly charred on the outside
  • Flip occasionally for even cooking.

Step 3: Chop the Chicken

  • Remove from heat and let it rest for a few minutes, then chop into bite-sized pieces.
  • 👉 This helps distribute flavor evenly in every taco.

Step 4: Warm the Tortillas

  • Warm your tortillas in a skillet or microwave so they’re soft and flexible.

Step 5: Build Your Tacos

  • Layer each tortilla with:
  • Sour cream or jerk crema
  • Shredded cabbage
  • Jerk chicken
  • Cheese

Step 6: Add Salsa & Serve

  • Finish each taco with a spoon of salsa and serve immediately.
  • 👉 This final step brings everything together.
