Ingredients
  

  • 1 box elbow macaroni (16 oz)
  • 1 bag bag mixed vegetables (carrot, sweet peas, corn)
  • 1 cup red onion (finely chopped)
  • 1 cup bell peppers ( green, red,orange, yellow)

For the Dressing:

  • 2 cups mayonnaise
  • 1/4 cup apple cider vinegar or white vinegar
  • 2 tbsp sugar (adjust to taste)
  • 1 tsp salt (or to taste)
  • 1 tsp complete seasoning
  • 1 tbsp black pepper (or to taste)
  • 1/2 tsp paprika (optional, for garnish)

Instructions
 

Step 1: Cook the Pasta

  • Boil the elbow macaroni in salted water until al dente.
  • Drain and rinse under cold water to stop the cooking process and remove excess starch.
  • Step 2: Prep the Vegetables and Add-Ins
  • Boil frozen mixed vegetables for 3 mins, then rinse in cold water. (or let it thaw naturally and  then rinse it)

Step 3: Make the Dressing

  • In a large bowl, whisk together: mayonnaise, vinegar, sugar, salt, black pepper, paprika, complete seasoning.

Step 4: Combine and Chill

  • Gently fold the cooked macaroni, vegetables, and dressing until evenly coated.
  • Cover and refrigerate for at least 2 hours to allow flavors to meld.
