Ingredients
  

For the Vegan Jerk “Chicken”

  • 12 oz vegan chicken strips (soy-based, seitan, or soy curls)
  • tbsp jerk seasoning vegan
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp smoked paprika

For the Vegan Alfredo Sauce

  • 1 cup raw cashews , soaked and drained
  • cups coconut milk (or almond milk)
  • 3 tbsp nutritional yeast
  • 2 cloves garlic
  • 1 tbsp vegan butter or olive oil
  • ½ tsp onion powder
  • 1 tsp jerk seasoning ,add more for more heat
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper

For the Pasta

  • 12 oz fettuccine , penne, or linguine pasta
  • Water , for boiling
  • Salt , for pasta water

Optional Add-Ins & Toppings

  • 1-2 cups fresh spinach or kale
  • ½ cup sliced bell peppers
  • Vegan parmesan cheese
  • Fresh parsley or scallions
  • Extra jerk seasoning or Scotch bonnet sauce (for heat)

Instructions
 

Step 1: Season and Cook the Vegan “Chicken”

  • Toss the vegan chicken with olive oil, jerk seasoning, garlic powder, and smoked paprika. Sauté in a hot skillet until golden, slightly crispy, and fragrant. Set aside.

Step 2: Cook the Pasta

  • Boil pasta in well-salted water until al dente. Reserve ½ cup of pasta water, then drain.

Step 3: Make the Vegan Alfredo Sauce

  • Blend soaked cashews, plant milk, nutritional yeast, garlic, onion powder, salt, and pepper until completely smooth and creamy.

Step 4: Bring It All Together

  • Pour the sauce into a skillet over medium heat. Add cooked pasta, jerk “chicken,” and a splash of pasta water to loosen the sauce. Toss until everything is coated and creamy.

Step 5: Taste & Adjust

  • Adjust salt, add more jerk seasoning for heat, or a squeeze of lime for brightness.
