Ingredients
  

  • 3 lbs of Chicken or whole
  • 2 tbsp Jerk seasoning
  • 2 tbsp Browning Sauce
  • 2 tbsp Mushroom Soy Sauce
  • 1 tsp of Adobo
  • 1 tsp of Complete Seasoning
  • 2 tbsp Green seasoning
  • 3 tbsp of Black Pepper
  • 1 tsp of salt
  • ¼ cup sugar
  • 1 tsp of onion powder
  • 1/2 -1 cup of canola oil
  • 3 pegs of Raw Garlic
  • 5 pimento seeds
  • 1/4 cup of raw onions
  • 1 scotch bonnet pepper
  • 1 tbsp of Raw Ginger
  • 2 tbsp of Sweet Pepper
  • 1 long carrot
  • 1 medium Irish Potatoes
  • 1 hand of thyme
  • 2 stalks of scallions
  • 2 tbsp of Browning
  • 1 cup of Ketchup
  • 1/4 of Sweet Baby Ray’s sweet and spicy sauce or honey BBQ (optional)

Instructions
 

  • Wash chicken in a vinegar,water and lime combination to take away the rawness and slime on the chicken.
  • Time to season your chicken with your dry seasonings Adobo, complete seasoning, Oregano, black pepper, jerk seasoning, Green seasoning, onion powder, and Browning. Rub it up and let it marinate overnight.
  • Add your oil to a pot and let it get hot. To this pot add your freshly crushed garlic, thyme, and pimento to the oil.
  • Add your chicken and brown for 3-4 minutes on both sides. Do this to all the pieces of chicken. Place the brown pieces on a plate.
  • After frying all the chicken throw away the remaining oil and add the chicken back to the empty pot. (Add water to the remainder juices from the bowl that the chicken was seasoned in)
  • Now it's time to add water to the chicken make sure the water covers the chicken. Add your ketchup, BBQ sauce, sugar, thyme, onions, scotch bonnet pepper, ginger and sweet pepper:
  • Season the pot again with 2 tbsp of black pepper(to taste), 2 tbsp of complete seasoning, salt to taste, and 2 tbsp of adobo.
  • Give that a mix and let it boil for 15 minutes. After that, it is now time to add your carrot and or potatoes.
  • Boil until the carrots are soft which is about 10-15 mins and now you are ready to serve.
