Soft, buttery green Creeper cookies colored with real Jamaican callaloo and topped with dark chocolate faces. A fun Minecraft treat with a Caribbean twist.
2tbspcooked callaloo purée, well drained (blended with 2 tbsp sweetened condensed milk)
1tsplime zest(optional)
Green gel food coloring(optional)
Dark chocolate chunks, for Creeper faces
A little melted dark chocolate,
Instructions
Blend the cooked callaloo with the 2 tbsp sweetened condensed milk until smooth. Drain well.
Whisk the flour, baking powder and salt together.
Beat the butter and sugar until creamy. Mix in the egg, vanilla, callaloo purée and optional lime zest. Add green gel coloring if needed.
Gradually mix in the dry ingredients until a soft dough forms.
Flatten the dough into a disc and freeze for 15 to 20 minutes, until firm enough to roll.
Preheat the oven to 350°F (175°C). Roll the dough to ¼-inch thickness and cut out your Minecraft shapes. If the cutouts soften, chill the tray for 5 to 10 minutes.
Bake for 8 to 12 minutes, until the edges are set. Cool completely.
Melt a few dark chocolate chunks in the microwave in 15-second intervals, stirring between each. Dip the remaining chunks in the melted chocolate and arrange them into square eyes and a blocky mouth on each cookie.
Let the chocolate harden before handling.
Notes
Drain the purée well. Extra moisture makes the dough sticky and the cookies spread.
