Ingredients to Season Fish

Ingredients When Cooking Snapper

  • 1/4 Yellow sweet pepper
  • 1/4 Green sweet pepper
  • 1/4 Orange sweet pepper
  • 1 Carrot
  • 1 Onion
  • 3 garlic
  • 1/4 cup of butter
  • 1 can Coconut milk
  • Curry powder
  • Scotch Bonnet Pepper
  • Thyme

Instructions

  • Wash fish in vinegar and lime and soak for at least 10 minutes
  • While the fish soaks mix dry fish seasoning in a bowl
  • Drain fish and slice on both sides in the opposite direction
  • Then season fish with mixed dry seasoning( leave about 3 tbsps for later) and let it soak for no less than 30 mins to overnight.
  • In a pan add butter, curry powder, and garlic. Let it get to a bubble.
  • Add your fish to the pot and get a little sear on one side.
  • While it sears to a bowl add coconut milk, pimento, curry powder, and the rest of the dry. Season blend and mix well.
  • Pour the coconut milk into the pot and let it simmer
  • While the fish simmers chop up your carrots, onions, and sweet peppers. (Do not chop the scotch bonnet pepper)
  • Add all the ingredients to the pot cover it and just let it steam on medium to low fire.
  • It should be in 45 mins, but another way to know when the fish is done is just to poke it with a fork, if the fork slides in without stopping then your snapper is done cooking.
  • Serve with a Side of your choice.
