Coconut Curry Snapper, it's nothing like some good steamed fish! Pairing this snapper fish with coconut and curry was a match made in heaven. It’s not even fair how delicious these flavors are! No bland flavors over here! This yellow tail snapper is will have your pallet on a joy ride. With onions, peppers, and carrots let me tell you it's spicy and delicious spices. It neva have nice suh!
Wash fish in vinegar and lime and soak for at least 10 minutes
While the fish soaks mix dry fish seasoning in a bowl
Drain fish and slice on both sides in the opposite direction
Then season fish with mixed dry seasoning( leave about 3 tbsps for later) and let it soak for no less than 30 mins to overnight.
In a pan add butter, curry powder, and garlic. Let it get to a bubble.
Add your fish to the pot and get a little sear on one side.
While it sears to a bowl add coconut milk, pimento, curry powder, and the rest of the dry. Season blend and mix well.
Pour the coconut milk into the pot and let it simmer
While the fish simmers chop up your carrots, onions, and sweet peppers. (Do not chop the scotch bonnet pepper)
Add all the ingredients to the pot cover it and just let it steam on medium to low fire.
It should be in 45 mins, but another way to know when the fish is done is just to poke it with a fork, if the fork slides in without stopping then your snapper is done cooking.
