Step 1: Roast the Cauliflower
Preheat oven to 425°F (220°C).
Heat 2 tbsp olive oil and butter in a large skillet over medium-high heat.
Place cauliflower steaks in the pan and let them cook 3–4 minutes per side until deeply golden.
Don’t move them too much — let that crust form.
Place cauliflower steaks on a lined baking sheet.
Brush both sides with olive oil and season with salt, pepper, paprika, and garlic powder.
Roast for 20 minutes, flipping halfway, until golden and tender.
Step 2: Make the Curry Glaze
To a sauce pan add coconut milk, curry powder, sugar, and seasonings. Stir for 30 seconds.
Simmer for 5–7 minutes until slightly thickened.
Taste and adjust salt, spice, and sweetness.
Step 3: Glaze & Finish
Spoon curry sauce generously over the roasted cauliflower steaks.
Return to the oven for 5 more minutes to let the flavors soak in.
Garnish with fresh herbs or scallions if desired.
