4 ears fresh corn pinch of salt Scotch Bonnet Butter: ½ stick butter , melted ½ Scotch bonnet pepper , finely minced ½ tsp salt
Melt butter and dice up a scotch bonnet pepper. ( leave seeds out)
Mix butter, pepper, lime zest, and salt until blended.
Preheat grill to medium-high.
Brush corn with oil and salt. Grill 8-10 min, turning often.
Slather with Scotch Bonnet Butter. Serve hot!
