Jamaican Brown Stew Cow Foot is slowly simmered and softened giving you a soft gel-like texture. You can also carry the cow foot or add it to your soups, it is delicious and a big part of the Jamaican/Caribbean cuisine. Cow heels or cow feet are loaded with nutrients, especially collagen. Instructions
Clean Cow Foot
In a bowl, add the cow foot round with enough water to cover it along with the salt and vinegar or lime juice.
Allow the cow foot to sit for about 5 minutes before rinsing with cool water.
Use a small knife to get rid of any hair that may be present on the skin.
Season the Cow Foot
Pat the cow foot dry with a piece of paper towel and add:
Complete Seasoning, Adobo, Oxtail Seasoning, Garlic, Black Pepper, Salt, Pimento Seed, and Browning.
Rub all the ingredients onto the cow foot until fully coated. Allow to sit for at least 30 minutes until ready to cook. (Or marinate overnight for best results)
Cook the Cow Foot
Place the crowfoot in the pressure cooker
Add the seasoned cow foot and 2-3 cups of water depending on the amount and pressure for 40 minutes.
Run water on the pressure cooker top then open it (this all depends on the type of pressure cooker)
Transfer the meat to a wider pot. ( not essential but convenient)
Add in water if needed, scallion, pimento, bell peppers, scotch bonnet, thyme, and onion cook for another 15 mins then add in the butter beans. (black pepper, salt and all purpose to taste)
Stir and simmer for 5 minutes, or until the desired sauce consistency is reached.
Serve best with white rice, white rice, or boiled dumpling.
