Jerk Tavern
Nothing beats the smoky, sweet, and spicy flavor of honey BBQ beef ribs. They're even better with bold Caribbean spices. This dish enhances beef ribs with jerk seasoning, dried allspice, and island spices. It blends rich barbecue flavors with a tropical twist. These ribs are so tender they fall off the bone. They are also full of amazing flavor.

Ingredients

For the Ribs:

  • 3-4 lbs beef ribs (short ribs or back ribs)
  • 2 tbsp dry jerk seasoning
  • 1 tbsp dried allspice
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg
  • 2 tbsp brown sugar
  • 3 tbsp mushroom soy sauce (as a binder, optional)
  • 2 tbsp oil (olive oil or vegetable oil)
  • 2 tbsp apple cider vinegar
  • ½ cup beef broth or water (for moisture when baking)

For the Honey BBQ Sauce:

  • 1 cup BBQ sauce (your favorite brand or homemade)
  • ¼ cup honey
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • ½ tsp grated fresh ginger
  • ½ tsp scotch bonnet pepper sauce (optional for heat)
  • 1 tsp thyme (fresh or dried)
  • 1 tsp dried allspice

Instructions

Step 1: Preparing the Ribs

  • Remove the Membrane – Flip the ribs over and remove the thin membrane on the bone side. This helps the seasoning penetrate better.
  • In a bowl, mix oil and mushroom soy sauce.
  • Apply a Binder – Lightly coat the ribs with mushroom soy sauce or oil to help the seasoning stick.
  • Season the Ribs – Mix jerk seasoning, dried allspice, garlic powder, onion powder, paprika, black pepper, salt, nutmeg, cinnamon, and brown sugar in a bowl. Rub the mixture all over the ribs, ensuring even coverage.
  • Let It Marinate – Cover and refrigerate for at least 2 hours (overnight for the best flavor).

Step 2: Cooking the Ribs in the Oven

  • Preheat your oven to 275°F (135°C).
  • Place the ribs on a baking sheet lined with foil and add apple cider vinegar and beef broth to help keep them moist.
  • Cover with foil and bake for 3-4 hours, or until tender.
  • Remove from the oven and proceed to the glazing step.

Step 3: Making the Honey BBQ Sauce

  • In a saucepan over medium heat, combine BBQ sauce, honey, Worcestershire sauce, soy sauce, lime juice, grated ginger, thyme, dried allspice, and scotch bonnet sauce.
  • Stir well and let it simmer for 5-7 minutes until slightly thickened.
  • Remove from heat and set aside.

Step 4: Glazing and Finishing

  • Brush the honey BBQ sauce generously over the ribs.
  • Set the oven to broil and broil for 5 minutes until the glaze caramelizes.
  • Let the ribs rest for 10 minutes before slicing.
