How to make Oxtail Poutine

Ingredients
  

  • 4-5 large russet potatoes peeled or unpeeled and cut into ¼" wide sticks
  • 1 teaspoon sea salt
  • 10 ounces white cheddar cheese curds at room temperature
  • Sweet Pepper red, yellow, green, orange (1 piece of each)
  • Oxtail

Instructions
 

  • Preheat oil
  • Wash potatoes (peel if desired) and cut into ¼" fries.
  • Let potatoes soak in cold water in a bowl for at least 30 minutes. Remove from water and dry very well.
  • Fry the Potatoes until firm and place them on a wire rack with a tray under the bottom to catch the excess oil.
  • Place the fries in the fridge for at least an hour to 4 hours for best results.
  • While the fries chill cook your oxtail ( for quick oxtail pressure it for 45 min or slow cook for 3 hours)
  • Heat the oil and fry the fries until golden brown and crispy then toss the fries in salt.

Poutine Topping

  • After you finish cooking your oxtail debone and chop up the oxtail.
  • Chop up bell peppers (red, yellow, green, and orange).
  • Add 2 tbsp of oil to a pot and sauté sweet peppers.
  • Add ¼ cup of oxtail gravy to the pot and the chopped up oxtail mix it well.

How to Assemble Poutine

  • Place your fries.
  • Then add cheese curds on top of the fries.
  • Pour the hot oxtail gravy over the fries and cheese.
  • Then pot the poutine topping all over the poutine.
  • Serve immediately.
