Wash your goat meat in a mix of vinegar, lime, and water (let it soak for at least 15 mins). Then rinse the meat off with water
Now it’s time to season your meat. Add your dry seasonings; mushroom sauce, Paprika, Adobo, Jerk Seasoning, Complete Seasoning, Black Pepper, Minced Garlic, Onion Powder, and Green Seasoning.
Rub it all together and place it in the fridge overnight for all those seasonings to infuse In the meat.
Take the meat out of the fridge and let it sit at room temperature for at least 10-15 minutes.
To the pot 1/8 cup of oil, thyme, add 2 pegs of garlic and 4 pimento seeds.
When the oil is hot add your goat meat so it can brown in the pot.
When all the meat is brown, cover the meat with water. Then, add cut-up onions, sweet pepper, thyme, ginger, and scotch bonnet pepper.
Cover the pot and let meat boil for 2-3 hours or until soft. Check every half hour to add water if needed.
If there is not enough water in the pot add 1 cup
Now, season the pot with 1 cup of ketchup, 1/4 cup of sugar, 1 pack of ram it up, 1 tbsp of Adobo, 1 tbsp of Complete Seasoning, 1 tbsp of Black Pepper, and 1 tsp of salt (to taste). Boil for 15 minutes.
Now is the time to add your potatoes and carrots.
Let that boil for 15-20 minutes (or until potatoes and carrots are soft)
Now you are all done. It's time to serve.
