If you are not using frozen callaloo. Now is the time to start cooking the callaloo up (RECIPE HERE). Let it cool and drain all liquid.
Heat a large saucepan over low-medium heat and melt butter, when the butter is melted add flour and stir until smooth.(You do not have to add flour and make a rue if you don't have time.) Skip if needed.
In this order: Add heavy cream first, then stir then add sour cream, cream cheese, seasonings. Give it a stir
Add the cheese, gouda cheese, mozzarella cheese, and parmesan cheese
When the mixture begins to melt, turn the heat to low.
Season with salt, pepper, and complete seasoning. Add cooked, canned or fresh callaloo and combine well. Slowly stir and simmer ingredients until all cheese is completely melted and the dip becomes creamy and well combined. Cook for about another 2-3 minutes to blend flavors.Cooked Callaloo: If using cooked callaloo cool and drain liquid.Fresh/Frozen Callaloo: Rinse and Drain all liquid. Canned Callaloo: Drain liquid.
Turn your oven on broil and caramelize the top for 3-4 mins
Serve immediately when it's warm with, crackers or tortilla chips
