Ingredients
  

Ingredients to season chicken

  • 1 pack Chicken wings
  • 2 tbsp black pepper
  • 2 tbsp complete seasoning
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp red pepper flakes
  • 1 tsp salt
  • 2 tbsp paprika
  • 1 tbsp adobo
  • 1/4 cup green seasoning

Ingredients for flour

  • 2-3 cups of flour
  • 1 tsp black pepper
  • 1 tsp complete seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp adobo

Ingredients for Oil

  • 1/2 cup of oil
  • 3 cloves of garlic
  • 1 stem of Thyme
  • 5 pimento berries

Ingredients for Escovitch Sauce

  • 1 Onions chopped in rings
  • Bell Peppers 1/2 of each color red, yellow, green, orange
  • 2 Carrots chopped small
  • Scotch Bonnet Peppers remove seed if necessary
  • 1/2- 1 cup Vinegar
  • 1/4 cup Sugar
  • 15 Pimiento Berries
  • 3 stems of Fresh Thyme
  • 1/8 cup Orange Juice

Instructions
 

  • Once you have your chicken, you will need to soak the chicken in vinegar and lime or lemon water then rinse with fresh water.
  • Season chicken with a few spices listed above. After seasoning the chicken let it marinate overnight for maximum flavor.
  • Heat oil and add the seasoning listed above in the oil to flavor it.
  • Then season your flour with the same seasoning you seasoned the chicken.
  • Fry until it is crispy and golden brown. for about 8-10 minutes
  • Next make the escovitch pickle sauce, made with vinegar, sweet pepper, onions, scotch bonnet, and more.
  • The marinade is served on top of the chicken this allows the flavors to meld together and create a delicious taste.

How to Make Escovitch Pickle Sauce

  • – Chop up all your ingredients bell peppers (red, yellow, and green), carrots, onions, scotch bonnet pepper.
  • To a medium saucepan, add white vinegar and water, let that boil and come to a bubble then add in your carrots and boil for 5 mins
  • Then add salt, granulated sugar, pimento berries, bell peppers (red, yellow, and green), orange juice, onion, and seasoning.
  • Boil for 5 more mins the vegetables don’t over boil we like the vegetables crunchy.
  • Add the vegetables to a mason jar then pour the vinegar into it. Cool then place the lid on the Mason Jar.
