1 can s Grace Jack Mackerel, 14 oz. 1/4 cup Vegetable Oil 1 medium onion chopped 1 medium tomato chopped 1 medium green sweet pepper chopped 1 medium red sweet pepper chopped 1 medium yellow sweet pepper chopped 1 scotch bonnet pepper optional 3 tbsp black pepper 2 tbsp complete seasoning
Heat vegetable oil.
Add chopped onion and tomato, garlic, sweet pepper scotch bonnet .
Sauté for 3 minutes, then add the Jack Mackerel, ketchup, and black pepper and complete seasoning then stir well.
To Serve: Plate mackerel and serve with rice, boiled dumpling, festival or fried dumpling.
