Jerk chicken and waffles is a modern fusion. It combines the spicy, smoky flavors of Jamaican jerk chicken. They mix with the sweet, comforting texture of waffles. This creates a new and exciting flavor. Served with warm rum syrup for either breakfast, brunch, or a snack.
Use the leftover liquid from the bowl that the chicken was seasoned in to start the sauce.
Coconut Rum Waffle Ingredients
2cupsof coconut Milk
½cupalmond milk or milk of choice
2 ½cupsof cups all-purpose flour
1tspkosher salt
1tspof baking powder
½tspcinnamon powder
½tspof nutmeg
2large egg yolks
1tbspof Vanilla
⅓cupof corn oil or coconut oil
1cupsugar
Nonstick cooking oil spray

How to Cook Jerk Chicken
Cut the chicken open and clean the gut.
Wash the Chicken with Vinegar and Lime, and let it soak for 10 mins Tip: this takes away the slime and rawness.
Rinse off the chicken with water.
Stab up the chicken on both sides Tip: yes I said that lol. That’s how you get that seasoned-to-the-bone taste.
Add all your dry seasoning then all your wet ingredients
Rub that chicken Tip: all the holes you stabbed make sure to push all the seasoning in the holes.
Let’s Jerk Some Chicken
Light the grill then clean the grill with a wire brush.
Spray the grill with oil so it doesn’t stick.
Put your chicken on its back skin side up, on the grill for 20mins.
Keep flipping the chicken every 20 minutes for 45 minutes -1 hour (depending on the size of the chicken)
When the chicken is almost done just start making your sauce.
How to Make Your Jerk Sauce
Use the leftover liquid from the bowl that the chicken was seasoned in to start the sauce.
Add Ketchup, Red Stripe Beer, Sugar, Red Pepper Flakes
Mix, Mix, Mix and that’s it.
Flip and add the sauce to the other side and let it soak on the grill for 5 mins.
Tip: Let chicken cool down before chopping
All done just plate and serve.
Coconut Rum Waffles Instructions
Combine dry ingredients. Whisk together the flour, sugar, baking powder, cinnamon nutmeg, and salt and set that aside,
Combine wet ingredients. Add the coconut milk and milk of choice we chose almond milk, then add the egg yolks white rum, and vanilla extract. Whisk everything together until well combined.
Add wet ingredients to dry ingredients. Pour the wet ingredients into the dry ingredients and gently stir them together. Don’t over-mix it! A few chunks are just fine.
Spray your waffle maker with oil. Add the batter and cook it according to your waffle iron’s instructions (let it cook to the setting you choose.)
Serve and eat! Serve your waffles with some Chicken and syrup!
