Ingredients
  

  • 2 cups boneless skinless jerk chicken
  • 3 large eggs whisked
  • cup yellow onions diced
  • 2 cloves garlic minced
  • ½-1 cup frozen peas rinsed under warm tap water for a few seconds to thaw
  • cup red bell pepper
  • 4 cups cooked jasmine rice (preferably leftover from at least a day before
  • ¼ cup scallion sliced (separate the white and light green parts from the dark green part)
  • tbsp mushroom soy sauce
  • 2 tbsp black pepper
  • oil any high-heat oil, divided

Instructions
 

  • Preheat oil in a wok or large skillet.
  • Scramble your eggs and remove them.
  • Cook the onions, peppers, and garlic, then add the frozen mixed vegetables until they thaw.
  • Remove the veggies
  • Add oil and butter to the pan.
  • Add your rice. Allow the rice to “fry” and get a little toasty by leaving it alone for a minute.
  • Stir everything up, and allow the rice to sort of crisp up again.
  • Add in green onions, soy sauce, egg, and chicken, then combine.
  • Serve hot.
