Ingredients
  

Season Chicken

  • 2 pounds of chicken wings
  • 3 tbsp of Jamaican jerk seasoning (wet)
  • 2 tbsp of dry Jamaican jerk
  • 3 tbsp of adobo
  • 3 tbsp of complete
  • 1/4 cup of green seasoning
  • 2 tbsp of garlic powder
  • 2 tbsp of onion powder
  • 3 tbsp paprika
  • 4 tbsp pepper

Season The Oil

  • Oil (depends on the amount of chicken)
  • 1 Scotch Bonnet Pepper
  • 3 stems of Thyme
  • 2 pegs of Garlic
  • 5 Pimento Berries

Flour Coating

  • 2-3 cups Flour
  • 1 tbsp Paprika
  • 1 tbsp Adobo
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tbsp of Complete Seasoning
  • 1 tsp Black Pepper

Glaze Sauce

  • 1/2 cup of honey
  • 3 tbsp franks red hot sauce (hot sauce of choice)
  • 2 tbsp of red pepper flakes

Instructions
 

Season the Chicken

  • Wash chicken wings with water, vinegar, and lime or lemon, and rinse with water. Pat chicken dry with a paper towel.
  • Marinate the chicken wings in green seasoning, complete seasoning, adobo, garlic powder, onion powder, paprika, black pepper, and paprika,
  • Coat the chicken pieces generously ensuring that each piece is well coated. For maximum flavor, marinate the chicken in the refrigerator for at least 2 hours, or preferably overnight.

Season the Oil

  • Heat vegetable oil in a deep skillet or frying pan over medium-high heat add garlic, pimento berries, thyme, and scotch bonnet pepper. Make sure the oil is hot enough for frying.

Season the Flour

  • In a shallow dish, combine all-purpose flour with adobo, garlic powder, onion powder, complete seasoning, paprika, salt and black pepper. Mix well to incorporate the seasoning.
  • Take each marinated chicken piece and coat it in the seasoned flour mixture. Tip: Carefully scoop and fold the chicken wings into the flour until it’s fully covered. Press the flour in the chicken.

Frying the Chicken

  • Carefully place the coated chicken wings in the hot oil, being cautious not to overcrowd the pan. Fry the chicken until it is golden brown and cooked through, typically around 8-10 minutes,
  • Once cooked, remove the wings from the oil and place it on a wire rack to drain excess oil.

Glazing the Wings

  • In a deep bowl, Add honey, hot sauce, and pepper flakes. This will become your glaze.
  • Once the wings are cooked, pour the glaze on the wings and toss them in the glaze, ensuring they are fully coated

Serving and Garnishing

  • Sprinkle the wings with chopped fresh chives for added freshness and color.
  • Serve the jerk honey hot wings with your favorite dipping sauce, such as ranch or blue cheese, and enjoy!
