Ingredients
  

  • Leg Quarters chopped in half separating the leg and thigh
  • 2 tbsp Jamaican jerk seasoning
  • 2 tbsp dried Italian seasoning
  • 3 tbsp complete seasoning
  • 2 tbsp paprika
  • 3 tbsp adobo
  • 2 tbsp garlic powder
  • 1/4 cup Green seasoning 
  • 5 tbsp mushroom sauce
  • Salt and pepper to taste

Baked Chicken Sauce

  • Chicken juice when the water spring from the chicken
  • 1/2 cup brown sugar
  • 1 cup of ketchup
  • 1/2 cup of Honey BBQ Sauce
  • 2 cloves garlic minced
  • 1/4 cup onion
  • 2 spring of scallion
  • 3 pieces of fresh thyme
  • Salt and pepper to taste
  • 3 tbsp Complete seasoning

Instructions
 

Marinate the chicken

  • - In a mixing bowl, combine the Jamaican jerk, Italian, complete seasoning, paprika, adobo, green seasoning, mushroom sauce, salt, and pepper.
  • - Place the chicken in a large ziplock bag or a shallow dish, and pour the marinade over them.
  • - Massage the marinade into the chicken, ensuring each piece is well-coated.
  • - Seal the bag (or cover the dish with plastic wrap) and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to penetrate the meat.

Preheat the oven:

  • - Preheat your oven to 400°F (200°C).

Bake the chicken:

  • - Add the chicken to the baking dish and pour the seasoned juices on top to prevent sticking.
  • - Bake in the preheated oven for approximately 25-30 minutes. Then it's time to make the sauce.

Make Sauce:

  • - In a sauce pot and 2 tbsp of oil then saute onions, thyme, scallions, garlic, and sweet pepper.
  • - Add the chicken juice water from the oven that the chicken sprang when baking.
  • - Add in ketchup, BBQ sauce, sugar mushroom sauce, complete seasoning, salt, and black pepper to taste.
  • - Boil for 10-15 minutes or until sauce thickens.
  • - Pour the sauce on the chicken and place the chicken back in the oven for 30 mins turn the oven down to 350 degrees.

Serve and enjoy!

  • - Once cooked, remove the chicken from the oven and let it rest for a few minutes.
  • - Serve your oven-baked chicken Jamaican style with a side of coconut rice, fried plantains, or a fresh salad for a complete Caribbean-inspired meal.
