3 cups cooked long-grain rice (or 1 ½ cups uncooked) 1 package Gardein beefless ground (10.5–12 oz) 1 medium medium onion , diced ½ green bell pepper , diced ½ red bell pepper , diced 3 cloves garlic , minced 1-2 tbsp olive oil or vegan butter 1 tbsp green seasoning (optional) 1 tbsp jerk seasoning 1 tbsp mushroom soy sauce 1 to 1½ tbsp Cajun seasoning (adjust to taste) 1 tsp paprika ½ tsp dried thyme ½ tsp black pepper Salt to taste 2 stalks green onion (scallion) , chopped
Cook rice if you haven't already. Set aside.
Heat oil in a large skillet. Add onion, scallion, and bell pepper. Sauté for 5–7 minutes until soft.
Stir in the garlic and cook for 1 more minute.
Add the Gardein ground beef. Cook until heated through and lightly browned.
Add green seasoning, cajun seasoning, paprika, jerk seasoning, and black pepper. Stir to coat.
Add cooked rice into the skillet, then add mushroom soy sauce. Toss until fully coated and 'dirty.'
Taste and adjust seasoning—add salt or more Cajun or jerk spice if needed.
