Equipment

  • Outdoor Charcaol Grill

Ingredients
  

Chicken Ingredients

  • 1 whole chicken or leg quarters
  • 3 tbsp of Black Pepper
  • 1 tsp Onion Powder
  • 2 tbsp Garlic Powder
  • 5 tbsp Complete Seasoning
  • 2 tbsp Adobo
  • 4 tbsp Jerk seasoning you can use hot or mild
  • 1.5 tbsp Browning
  • 1/4 cup Green Seasoning
  • 3 tbsp Mushroom Sauce

Sauce Ingredients

  • Use the left over liquid from the bowl that the chicken was seasoned in to start the sauce.
  • ¼ cup of Ketchup
  • 1 1/4 Red Stripe Beer
  • 2 tbsp Sugar

Instructions
 

Lets Cook

  • Cut chicken open and clean the gut
  • Wash the Chicken with Vinegar and Lime, let it soak for 10 mins Tip:this takes away the slime and rawness
  • Rinse off the chicken with water
  • Stab up the chicken on both sides Tip: yes I said that lol. That’s how you get that seasoned to the bone taste
  • Add seasonings
  • Rub that chicken Tip:all the holes you stabbed make sure to push all the seasoning in the holes
  • Lets Jerk Some Chicken
  • Light the grill
  • Clean the grill with the wire brush
  • Spray the grill with oil so it doesn’t stick (optional)
  • Put your chicken on its back, on the grill for 20mins ( close grill)
  • Flip the chicken
  • Keep turning it every 20 mins for 45mins - 1hr (or until cooked through)
  • Spay 1 cup of Red Stripe Beer on the chicken while its on the grill
  • When the chicken almost done just start making your sauce

How to Make Your Sauce

  • Use the left over liquid from the bowl that the chicken was seasoned in to start the sauce.
  • Add both of your BBQ Sauces
  • Add the Sugar
  • Mix, Mix, Mix and that's it
  • Flip and add the sauce to the other side
  • Tip: Let chicken cool down before chopping
  • All done just plate and serve
