Ingredients
  

  • 8-10 Chicken Leg and Thigh Pieces split is best
  • 3 tbsp Green Seasoning
  • 2 tbsp Adobo
  • 2 tbsp of Complete Seasoning
  • 2 tbsp Paprika
  • 1 tsp Cayenne Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 3 tsp Black Pepper
  • 1 packet of Sazon

Season The Oil

  • Oil
  • 1 Scotch Bonnet Pepper
  • 3 stems of Thyme
  • 2 pegs of Garlic
  • 5 Pimento Berries

Flour Coating

  • 2-3 cups Flour
  • 1 tbsp Paprika
  • 1 tbsp Adobo
  • 1 tbsp Cayenne Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tbsp of Complete Seasoning
  • 1 tsp Black Pepper

Bar-B-Fried Sauce

  • 2 cup Honey Barbecue Sauce
  • 1/2 cup Ketchup
  • 1/2 cup Duck Sauce
  • 1 tbsp Complete Seasoning
  • 1 tsp Salt
  • 1 tbsp Black Pepper
  • 1/3 cup Water
  • 2 tbsp Brown Sugar
  • 2 tsp Red Pepper Flakes (as desired this is optional)

Instructions
 

Season the Chicken

  • Wash chicken with water, vinegar, and lime or lemon, and rinse with water. Pat chicken dry with a paper towel and set aside.
  • Marinate the chicken pieces in green seasoning, complete seasoning, adobo, garlic powder, onion powder, paprika, cayenne pepper, black pepper, sazon and paprika,
  • Coat the chicken pieces generously ensuring that each piece is well coated. For maximum flavor, marinate the chicken in the refrigerator for at least 2 hours, or preferably overnight.

Season the Oil

  • Heat vegetable oil in a deep skillet or frying pan over medium-high heat add garlic, pimento berries, thyme, and scotch bonnet pepper. Make sure the oil is hot enough for frying.

Season the Flour

  • In a shallow dish, combine all-purpose flour with adobo, cayenne pepper, garlic powder, onion powder, complete seasoning, paprika, salt and black pepper. Mix well to incorporate the seasoning.
  • Take each marinated chicken piece and coat it in the seasoned flour mixture. Tip: Carefully scoop and fold the chicken into the flour until it’s fully covered. Press the flour in the chicken.

Frying the Chicken

  • Carefully place the coated chicken pieces in the hot oil, being cautious not to overcrowd the pan. Fry the chicken until it is golden brown and cooked through, typically around 12-15 minutes, depending on the size of the chicken pieces.
  • Once cooked, remove the chicken from the oil and place it on a wire rack to drain excess oil.

Bar B Sauce

  • Preheat oven to 350 degrees.
  • In a bowl combine all the ingredients for the sauce dip the chicken in the sauce and pop them in the oven for 10 mins.
  • The next option is to add ingredients to a saucepan and allow the sauce to reduce until thickened, when to your liking remove the sauce from the heat dip chicken in the sauce and place it back on the wire rack.

Serve and Enjoy

  • Jamaican Bar-B Fried Chicken is best enjoyed hot and crispy. Serve it alongside traditional Jamaican sides such as rice and peas, fried plantains, or Jamaican-style cabbage salad.
