Ingredients
  

Season Chicken Back

  • 1 pack chicken back or any part of chicken
  • 1/4 cup Jamaican curry powder
  • 4 tbsp Green Seasoning
  • 2 tbsp adobo
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 tbsp complete seasoning
  • 3 tbsp paprika
  • 1 tsp cayenne
  • 3 tbsp black pepper to taste

Season Oil Ingredients

  • Vegetable oil for frying
  • 1 scotch bonnet pepper
  • 5 Pimento Berries
  • Thyme
  • 3 Pegs of Raw Garlic

Season Flour

  • 4 tbsp curry powder
  • 4 cups Flour
  • 2 tsp adobo
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cayenne
  • 3 tbsp complete
  • 3 tbsp black pepper

Instructions
 

  • Soak the chicken in vinegar and lime water to take away rawness and slime for 5 mins
  • Season your chicken with dry season and green seasoning ensuring that each piece is evenly coated. Allow the chicken to marinate for at least 1 hour in the refrigerator.
  • Heat vegetable oil in a deep frying pan or a Dutch oven over medium-high heat. Add in scotch bonnet, pimento berries, thyme, and garlic to flavor your oil.
  • Fill a bowl with flour and add your dry seasoning to it.
  • Put the chicken back in the flour about 3-4 at a time depending on pot size. Tip: Carefully scoop and fold the chicken into the flour until it’s fully covered. Press the flour in the chicken.
  • Carefully place the marinated chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry the chicken in batches if necessary.
  • Cook the chicken for about 8-10 minutes turn at the 5-minute mark and fry until golden brown and cooked through.
  • Once the chicken is cooked, transfer it to a plate lined with paper towels to drain excess oil. Or wire rack.
  • Serve the Jamaican Curry Fried Chicken Back hot with your choice of sides, such as rice and peas, fried plantains, and many more.
