How to Make Jamaican Curry Fried Chicken
- Soak the chicken back in vinegar and lime water to take away rawness and slime for 5 mins
- Season your chicken with dry season and green seasoning ensuring that each piece is evenly coated. Allow the chicken to marinate for at least 1 hour in the refrigerator.
- Heat vegetable oil in a deep frying pan or a Dutch oven over medium-high heat. Add in scotch bonnet, pimento berries, thyme, and garlic to flavor your oil.
- Fill a bowl with flour and add your dry seasoning to it.
- Put the chicken back in the flour about 3-4 at a time depending on pot size. Tip: Carefully scoop and fold the chicken into the flour until it’s fully covered. Press the flour in the chicken.
- Carefully place the marinated chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry the chicken in batches if necessary.
- Cook the chicken for about 8-10 minutes turn at the 5-minute mark and fry until golden brown and cooked through.
- Once the chicken is cooked, transfer it to a plate lined with paper towels to drain excess oil. Or wire rack.

- 4 tbsp Green Seasoning
