Ingredients
  

Taco Shell Ingredients

  • 2 cups flour all-purpose
  • Olive oil
  • 1/2 cup water or as needed

Jamaican Callallo Ingredients

  • 1 bunch of callaloo leaves or 1 can
  • 1 tomato chopped
  • 1 onion chopped
  • 2 cloves of garlic diced
  • 1 small small sweet pepper chopped
  • 1 stem thyme
  • 1 head scallion
  • 1 piece scotch bonnet pepper remove seed for less spice
  • 1/2 stick butter
  • 2 tbsp complete seasoning
  • 1 tsp adobo
  • 1 tsp Salt to taste
  • 1 tbsp Black pepper to taste
  • Black Bean Ingredients

Black Bean Mix Ingredients

  • 1 can black beans drained and rinsed
  • 1/4 cup onion finely chopped
  • 1/4 cup sweet pepper chopped
  • 2 cloves garlic minced
  • 1/2 tsp thyme leaves
  • 1 tbsp scallion
  • 1/2 tsp Green seasoning
  • 1 tbsp complete seasoning
  • 1 tbsp adobo
  • 1 tsp red pepper flakes
  • Salt and black pepper to taste
  • Tortillas
  • Toppings: diced tomatoes sliced avocado, chopped cilantro, lime wedges, hot sauce (optional)

Instructions
 

  • Make taco shell unleavened bread (RECIPE HERE)
  • Start by preparing the callaloo. (RECIPE HERE)
  • Saute onions, sweet pepper, thyme, garlic, scallion until translucent. Then incorporate the black beans into the skillet, stirring well to combine them with areomatics. Cook for 2-3 minutes.
  • Sprinkle complete seasoning, adobo, red pepper flakes, Green seasoning, salt, and pepper over the mixture. Stir thoroughly to ensure all the flavors are well distributed. Allow the mixture to cook for another 2-3 minutes, until heated through.
  • For this recipe we used a homemade taco shell (UNLEAVENED BREAD RECIPE HERE) or warm up store-bought tortillas in a separate skillet or microwave.
  • Assemble your tacos by spooning the callaloo then black bean mixture onto each tortilla. We ate it plan nut feel free to ad these toppings diced tomatoes, sliced avocado, chopped cilantro, a squeeze of lime juice, and hot sauce (if desired).
  • Serve your Jamaican Callaloo Black Bean Tacos while they're still warm and enjoy the explosion of flavors!
