Callaloo Cheese Danish™
When most people think of callaloo, dessert is probably the last thing that comes to mind.
For generations, this beloved Jamaican leafy green has been served alongside breakfast, paired with saltfish, stirred into soups, or enjoyed as a comforting side dish. But at Jerk Tavern, we believe incredible ingredients deserve to be explored beyond tradition.
That’s exactly why our Jerk Tavern™ Callaloo Series was created.
This series celebrates the incredible versatility of one of Jamaica’s most iconic vegetables by transforming it into recipes you may have never imagined, from appetizers and dips to baked goods and, now, dessert.
This Callaloo Cheese Danish is one of our favorite creations so far.
Imagine buttery, flaky puff pastry wrapped around a smooth vanilla cream cheese filling that’s lightly infused with vibrant green callaloo purée. Finished with a sweet vanilla glaze and optional toasted coconut, it looks like something straight from a neighborhood bakery while introducing a completely unexpected Caribbean twist.
The callaloo doesn’t overpower the pastry. Instead, it adds beautiful natural color, subtle earthy notes, and a conversation-starting ingredient that proves Jamaican cooking can be both rooted in tradition and endlessly creative.

Welcome to the Jerk Tavern™ Callaloo Series
Our Callaloo Series is dedicated to showing just how versatile this incredible Jamaican green can be.
Too often, callaloo is limited to only a handful of traditional dishes. While we absolutely love those classics, we also believe ingredients become even more exciting when we explore new possibilities.
Throughout this series you’ll discover creative recipes that prove callaloo belongs in far more than breakfast.
From savory dishes to sweet treats, every recipe is designed to inspire home cooks to look at Jamaican ingredients through a fresh lens while still honoring the flavors that make Caribbean cooking so special.
This Callaloo Cheese Danish perfectly represents that mission.

Callaloo Cheese Danish Ingredients
- Cream Cheese– forms the rich, tangy base of the filling. It creates the signature bakery-style texture that pairs beautifully with puff pastry.
- Granulated Sugar– sweetens the filling while allowing the cream cheese flavor to remain the star.
- Sweetened Condensed Milk– adds richness, sweetness, and a silky texture while giving the filling a luxurious mouthfeel.
- Vanilla Extract– rounds out the flavors and gives the filling that classic bakery aroma.
- Callaloo Purée– after blanching and blending until smooth, callaloo adds a subtle earthy flavor, natural color, and a unique Caribbean twist without overpowering the dessert.
- Cinnamon (Optional)– a tiny pinch enhances warmth and complements the vanilla beautifully.
- Salt– a pinch balances the sweetness and deepens every flavor.
- Pepperidge Farm Puff Pastry– using store-bought puff pastry makes this recipe simple while delivering beautifully flaky layers.
- Egg Wash– brushing the outside only creates a glossy golden finish. There are no eggs in the filling.
- Vanilla Glaze– simple glaze finishes each Danish with sweetness while making them look bakery-worthy.
How to Make Callaloo Cheese Danish
Make the Callaloo Purée
Wash the callaloo thoroughly to remove any grit.
Bring a pot of water to a boil and blanch the leaves for 1 minute.
Immediately transfer them to an ice bath to preserve their vibrant green color.
Drain well and squeeze out as much moisture as possible.
Blend with condensed milk until completely smooth.
The purée should be silky and free of any visible pieces.
The Filling
In a large bowl, beat together:
- Cream cheese
- Sugar
- Sweetened condensed milk
- Vanilla
- Callaloo purée
- Cinnamon (optional)
- Salt
Mix until completely smooth.
If the mixture feels too soft, refrigerate it for 15–20 minutes before assembling the pastries.

Prepare the Puff Pastry
Preheat the oven to 400°F (200°C).
Line a baking sheet with parchment paper.
Lightly roll the thawed puff pastry to smooth the seams.
Cut into four equal squares.
Fill and Fold
Place approximately two tablespoons of filling in the center of each square.
Using a knife, lightly score a ½-inch border around each puff pastry square, being careful not to cut all the way through.
Prick the center a few times with a fork to help it bake evenly.
Pipe or spoon about 2 tablespoons of the callaloo cream cheese filling into the center, staying inside the border.
Brush only the border with egg wash.
Bake
Bake for 20–25 minutes.
The pastries are ready when:
- The pastry has puffed beautifully.
- The tops are a deep golden brown.
- The bottoms are crisp and flaky.
Allow them to cool for about 10 minutes.

Vanilla Glaze
Whisk together:
- 1 cup powdered sugar
- 2–3 tablespoons milk
- ½ teaspoon vanilla extract
Drizzle generously over the warm pastries.
Optional Garnishes
For an extra bakery finish, try adding:
- Powdered sugar
- Toasted coconut
- Freeze-dried strawberry crumbs
- Fresh strawberries
- Fresh raspberries
- White chocolate drizzle
- Lemon zest

Common Mistakes to Avoid
- Watery Purée– Extra moisture can make the filling too loose.
- Warm Pastry– Soft pastry doesn’t puff properly.
- Overmixing After Adding the Purée– Mix only until combined for the smoothest texture.
- Skipping the Steam Vents– Without vents, pastries may burst during baking.
- Glazing Too Early– Wait until they’ve cooled slightly so the glaze sets beautifully.

”He has told you, O man, what is good; and what does the Lord require of you but to do justice, and to love kindness, and to walk humbly with your God?“ Micah 6:8 ESV
Wisdom
God has given us everything we need to survive here on earth. He has given us food, clothing, shelter. A nice cool breeze and shade when it’s hot, rain for our crops, air for us to breathe, everything we need to build homes to live in and so on.
He also has given us a set of commands to obey, the 10 commandments He spoke to His chosen people Israel. A lot of people forget that God has left us rules while living on the earth that He created. We all were born into this world and we all will die and leave it.
We are not the creator but at times we act like we are, and we behave as if we created ourselves. God has told us what is good in His sight and what is bad, but we often choose what is bad or evil, aka sin. God is simple, He just wants us to be obedient to what He has commanded.
To do justice, love kindness, and walk humbly before Him. When He came down from heaven to be with us, and lived the human life as Jesus Christ, He made it even more simple. Just love Him with all our hearts, all our soul, all our mind and our strength.
Also, to love our neighbors the way we love ourselves. Simply walk in love and obedience towards God and love the people He has created. Do this, and we live forever. Believe in Jesus, love Him, and keep His commandments, for He is the way, the truth, and the life.
